Heritage turkeys are a unique treat. These birds can fly, naturally reproduce, and are much more similar to a wild turkey. Due to their increased activity, the carcass demonstrates more dark meat, lighter breasts, and subcutanous fat. They are bold in flavor and cook similar to a more modern Broad Breasted turkey.
The Heritage turkey takes much longer to grow - over twice the time - and more space. The males - called Toms - are significantly heavier than the females. They will dress 15# and up to 22#. The females - called Hens - are much smaller and lighter framed. They usually dress aroud 8 to 11#.
For those who only eat white meat, we suggest sticking with the Broad Breasted turkey. If you are going to deep fry your turkey, stick with the Broad Breasted turkey. If you want a showcase of bold turkey flavor in a traditional roasted turkey, try the Heritage Turkey.
