Making a great tamale is all about technique, and Chef Lambert
demonstrates how his method makes tamales extra plump
and moist. “We begin the class by eating a well-made tamale.
Then each participant learns how to create that tamale,
step-by-step.” Lambert adds that attendees will be served a
variety of tamales and salsa, so come hungry.
