  •  "Secrets of a Tamale Chef" is celebrating its tenth anniversary.
     If you have always wanted 
    to learn how to make tamales,
    this 90-minute demonstration class is for you.

    Making a great tamale is all about technique, and Chef Lambert
    demonstrates how his method makes tamales extra plump
    and moist. “We begin the class by eating a well-made tamale.
    Then each participant learns how to create that tamale,
    step-by-step.” 
    Lambert adds that attendees will be served a
    variety of tamales and salsa, so come hungry.

    Printed handouts include tamale and salsa recipes, ingredient &
    equipment sources, plus tamale reheating and storage guidelines.
